Black Bean Provence

Serves: Makes 2 cups

Ingredients:

1 – 15 oz can black beans
1 clove garlic
1 t lemon juice
1⁄2 c Plain Crystal Yogurt
1⁄4 c dijon mustard
1⁄2 t salt
1 T ground cumin

Directions:

In food processor fit with blade, chop garlic. Add beans and chop until pureed. Add remaining ingredients, mixing until well combined. Cover and chill at least 1 hour before service.

Will keep 3-4 day covered in the refrigerator.

Serve with Chicken or as a dip for Celery, Pita Bread, or Blue Corn Chips.
