Spinach Salad

Serves: 4 to 6

Ingredients:

Salad Ingredients:

1-9 oz bag fresh spinach, cleaned and stemmed
1 c roasted salted sunflower seeds
1 med red onion, thinly sliced
1⁄2 pound turkey bacon, cooked and chopped

Dressing:

1c low-fat or non-fat Crystal Vanilla Yogurt
1/3 c whole grain mustard
1⁄4 c balsamic vinegar
3⁄4 c olive oil
1 T salt
1⁄2 t pepper

Directions:

Lightly toss all salad ingredients.

Whisk Yogurt, Mustard, Vinegar, and salt. Slowly whisk in Olive oil to combine and thicken. Toss dressing with salad ingredients and serve immediately.
