Whoopie Pies

Serves: Makes 4 dozen

Ingredients:

Cakes:

1 pkg Chocolate Cake mix

Frosting:

1 c Crystal Butter
1 c cream cheese
2 pounds powdered sugar

Directions:

Cakes:

Mix according to box directions, substitute buttermilk for water. Grease baking pan and scoop cake batter onto pan 1 teaspoon at a time to make small cakes. Cakes will rise and spread slightly.

Bake at 350 for 7 to 12 minutes, until baked through

Frosting:

Whisk all frosting ingredients until smooth and fluffy.

Assemble:

After mini cakes have cooled, sandwich two cakes together with 1t frosting.

Store covered well and in refrigerator.
